Miniature Cheesecakes

This is a recipe that my friend Allison shared with me. It is so terribly easy, you will make these over and over again. The best part about this recipe is that you can flavor them with anything. Feeling chocolate cheesecakes; add some melted chocolate. Need to whip up a batch of key lime cheesecakes? Just add several tablespoons of key lime juice and the zest of the limes for an easy, tart treat!

Miniature Cheesecakes

  • 1 box of Vanilla Wafer cookies
  • 16 ounces cream cheese, softened at room temperature
  • 3/4 cups of granulated sugar
  • 2 large eggs
  • 1 Tablespoon good vanilla extract (or other flavoring, such as key lime, lemon, chocolate, Nutella)

Preheat the oven to 350 degrees F. Line cupcake tins with paper or foil liners. Place 1 Vanilla Wafer in the bottom of each liner.

Using a hand mixer, blend cream cheese, sugar, eggs and vanilla extract until lumps are gone.

Spoon mixture into cupcake liners, filling each liner 3/4 full. Bake for 12 to 15 minutes, or until center is set. Remove from the oven and allow to cool. Refrigerate cheesecakes for several hours before serving. Top with canned cherry or blueberry pie filling or fresh seasonal berries (such as blackberries, strawberries, or blueberries).

Yields approximately 2 dozen.
