Reuben Bites

In honor of the Super Bowl this coming Sunday, I thought I would share a recipe for a great party food. This combines all the classic flavors of a Reuben sandwich, but in a bite-size portion. The best part about this recipe is that it can easily be made in a food processor!
Reuben Bites
prep time: 15-20 minutes
yield: approximately 70 bites
2 eggs, beaten
6 ounces cream cheese, softened at room temperature
4 tablespoons onion, minced
1 1/2 cups shredded swiss cheese
2 cups corned beef, shredded
2 cups sauerkraut, drained and chopped
2 cloves garlic, finely minced
4 tablespoons flour
1 cup flour
egg wash
1 cup rye bread crumbs
vegetable or peanut oil for frying
Russian Dressing or 1,000 Island for dipping
Combine onion, cream cheese, garlic, flour, and eggs in a large mixing bowl with a rubber spatula until smooth. Gently fold in corned beef, swiss cheese, and sauerkraut until well blended. Place mixture in the refrigerator for 10 to 15 minutes.
Using a small ice cream scoop or melon baller, scoop chilled mixture onto a half sheet pan lined with parchment paper.
Dredge the bites in flour, egg wash and then in rye bread crumbs. Fry in vegetable or peanut oil until golden brown. Remove from oil and drain on sheet pan lined with paper towels. Keep warm in the oven until ready to serve.
Serve Reuben Bites on a large platter with Russian Dressing or 1,000 Island and toothpicks or tongs.
